Ingredients 1 1/2 cups almond milk (2 cups) 1/3 cup coconut oil 1 tablespoon vanilla extract (optional) 1 1,2 cup sugar 1 cup butter, softened 3/4 cup all-purpose flour 2 eggs 1 1 teaspoon baking soda 2 tablespoons unsalted butter 1 teaspoon vanilla extract 3 cups chopped pecans, seeds and raisins 2 cups powdered sugar 1/4 teaspoon salt 1 cup vanilla ice cream Directions Preheat oven to 350 degrees F. Line a 12-cup loaf pan with parchment paper and grease it.

Mix almond milk and coconut oil in a large mixing bowl.

Add vanilla extract and stir well.

Add sugar and butter and mix well.

Pour in flour and stir until combined.

Add eggs one at a time and mix until well blended.

Add in chocolate and mix just until combined, adding in the baking soda as needed.

Add all-spice to taste.

Pour batter into prepared pan.

Bake for 25-30 minutes or until golden brown and firm to the touch.

Remove from oven and allow to cool.

Frosting: Combine all-whole milk and cream in a medium bowl.

Mix well.

Combine the eggs one by one in a separate bowl.

With a pastry blender or food processor, blend until smooth.

Add the vanilla extract, butter and vanilla and blend until well combined.

Transfer to a wire rack and chill for 5 minutes.

To assemble: Place one of the cooled cookies in the middle of a greased cookie sheet and spread the remaining melted chocolate over it.

Place another cookie on top of the first cookie and sprinkle with the remaining chocolate.

Top with remaining melted butter and sprinkle again.

Spread the remaining cooled chocolate on top.

Place the second cookie on the bottom of the cookie sheet, and top with the chocolate and the remaining chilled chocolate.

Place in the fridge for 30 minutes or up to 1 hour.
